Up until a few years ago this vanilla was not considered of great value. However, today it is now rare and therefore coveted. Its full-bodied and spicier aromas make it an interesting mix in fish dishes. Although it originates from "Vanilla Tahitensis" it is very different from Tahiti Vanilla.  Note that it keeps very well over time. Woody and spicy aromas with walnut notes :
